    Its namesake capital city, lying in the valley called Valle de Lerma, was an important focus of development in colonial times and a defense post during the Independence war.

    At the foot of Cerro San Bernardo, which looms high above the city, you will find the monument to General Martin Miguel de Güemes, one of the leaders of the Independence struggles against the Spaniards.

    We could deservedly devote a whole chapter to the Tren a las Nubes (Train to the Clouds), which leaves Salta city to ascend the Andes along the Quebrada del Toro, continuing past San Antonio de los Cobres on its way to the stunning La PolvoriIla viaduct.

    An important wine-making center, the town of Cafayate is the Valles Calchaquies' principal tourist magnet, from where you can visit traditional sites like the canyon called Quebrada de los Cóndores, the Quilmes Ruins, and Cachi, an enchanting village also rich in colonial ruins.

    Regional culinary specialties:
    Tulpo charqui (maize and jerked meat soup), choclo con queso (corn with cheese), mazamorra (sweetish maize soup), humita (fresh ground corn), tamales, carbonada (beef and fruit stew), queso de patas (feet and meat cheese), ambrosia (similar to creme caramel), empanadas (filled pasties), quesillo con miel de cana (cheese with cane syrup), dulce de cayote (Malabar gourd conserve) and turrón (nougat bar).
